Pumpkin spice cake
Ingredients/Components
- butter, softened - 3/4 c
- eggs - 3 item
- granulated sugar
- vanilla extract
- salt - 1/2 tsp
- water - 1/4 c
- baking powder
- baking soda - 1 tsp
- all-purpose flour - 3 c
- ginger - 1/4 tsp
- sifted powdered sugar
- ground cloves - 1/4 tsp
- ground cinnamon
- ground nutmeg - 3/4 tsp
- undiluted evaporated milk - 1/2 c
- maple flavoring - 2 3
- solid pack pumpkin
- to 15 walnut or pecan halves - 10 item
- Add eggs; beat for 2 minutes
How to make pumpkin spice cake:
Cream sugar and butter in mixer bowl. Add eggs; beat for 2 minutes. Add pumpkin and vanilla; mix well. Beat in evaporated milk and water. Combine flour, baking powder, soda, salt and spices. Gradually beat into pumpkin mixture. Spread evenly into 2 greased and floured 9-inch round cake pans. Bake in preheated 325° oven for 35 to 40 minutes. Cool in pans on wire racks for 15 minutes. Remove from pans; cool completely. Frost with Maple Frosting.Maple Frosting:11 oz. cream cheese, softened1/3 c. butter, softened3 1/2 c. sifted powdered sugar2 to 3 tsp. maple flavoring Beat cream cheese, butter and powdered sugar in mixer bowl until fluffy. Add maple flavoring; mix well.To assemble, cut each cake in half horizontally with long, serrated knife. Frost between layers and on top of cake. Garnish with nuts.
Note: To make two-layer cake, frost between layers, over top and on sides of cake.
