  • sugar - 1 c
  • cinnamon - 2 tsp
  • eggs - 3 item
  • pkg - 2 oz
  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar - 1 c
  • ginger - 1 tsp
  • lemon juice - 1 tsp
  • Stir in pumpkin and lemon juice
  • walnuts, chopped fine - 1 c

How to make pumpkin roll:

Beat eggs on high speed for 5 minutes, gradually adding the sugar. Stir in pumpkin and lemon juice. Mix together dry ingredients and add to pumpkin mixture. Spread onto jelly roll pan; bake at 375° for 15 minutes. Unroll onto toweling sprinkled with powdered sugar; spread filling mixture thick over roll. Roll up and allow to cool; slice.Filling:1/2 tsp. vanilla1 c. powdered sugar4 Tbsp. butter2 (3 oz.) pkg. cream cheese, softened Mix filling ingredients together and spread over roll. This may be made ahead and frozen.
