  • eggs - 3 item
  • sugar - 1 c
  • pumpkin - 2/3 c
  • baking soda - 1 tsp
  • cinnamon - 1/2 tsp
  • flour - 3/4 c
  • margarine
  • cream cheese - 8 oz
  • vanilla - 2/3 tsp
  • confectioners sugar - 1 c

How to make pumpkin log:

Filling:2 Tbsp. margarine8 oz. cream cheese2/3 tsp. vanilla1 c. confectioners sugar Grease a 10 x 15-inch cookie sheet. Line with wax paper, then grease again. Mix batter in order of ingredients. Spread onto greased pan. Bake in a preheated oven at 350° for 15 minutes. Turn onto a flat towel that has been sprinkled with confectioners sugar. Roll up lengthwise, jelly roll fashion, towel and wax paper included. Let cool.

Combine filling ingredients. Unroll cake and remove wax paper. Spread filling evenly over entire cake. Reroll and refrigerate until ready to serve.
