Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1 c
- salt - 1 tsp
- brown sugar - 2 c
- confectioners sugar
- baking powder - 1 tsp
- ginger - 1/2 tsp
- sifted flour
- canned pumpkin - 2 c
- Crisco - 1 c
- cloves - 1/2 tsp
- Crsico - 1 c
- Add eggs, pumpkin and vanilla
How to make pumpkin gobs:
Cream Crisco and brown sugar. Add eggs, pumpkin and vanilla. Mix together the 7 dry ingredients. Add to creamed mixture. Drop onto cookie sheet. Bake for 10 minutes at 375°.Filling:3 Tbsp. cornstarch1 c. milk1 c. Crisco1 1/2 c. confectioners sugar1 tsp. vanilla Blend milk into cornstarch and cook until thick, stirring constantly. Let cool. Add Crisco, confectioners sugar and vanilla. Slice cooled cookies in half horizontally. Spread filling between cookie halves.These cookies may be made ahead and frozen. When needed, they can be removed from freezer and filling added.
