Pumpkin bran muffins
Ingredients/Components
- cinnamon - 1 tsp
- flour
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- canned pumpkin - 1 c
- light corn syrup - 1/2 c
- skim milk - 3/4 c
- light salt - 1/2 tsp
- sugar or 1/4 c - 1/2 c
- Raisin Bran cereal or 1 c - 1 c
How to make pumpkin bran muffins:
Spray 12 muffin cups with nonfat cooking spray. In a medium bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon.In a large bowl, using a wire whisk, beat Egg Beaters. Stir in pumpkin, cereal, milk, and corn syrup. Add to flour mixture. Stir until well blended. Spoon into prepared muffin cups. Bake at 400° for 18 to 20 minutes. Cook in pan 5 minutes.
