Pumpkin bran muffins
Ingredients/Components
- sugar - 2/3 c
- salt - 1/2 tsp
- egg, slightly beaten - 1 item
- baking powder - 1 Tbsp
- vegetable oil - 1/2 c
- all-purpose flour
- raisins - 1/2 c
- ground cloves - 1/4 tsp
- ground cinnamon - 1 tsp
- ground nutmeg - 1/2 tsp
- cinnamon/sugar, mixed - 3 Tbsp
- undiluted Carnation evaporated milk - 1/2 c
- wheat bran cereal not flaked - 1 c
How to make pumpkin bran muffins:
In medium bowl, combine cereal and milk. Let stand 10 minutes or until milk is absorbed. In large bowl, combine flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves; set aside. Add pumpkin, oil, eggs and raisins to cereal. Add liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into greased or paper-lined 2 1/2-inch muffin cups; fill to top. Sprinkle each muffin with 1 teaspoon cinnamon sugar. Bake at 400° for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pan and remove to eat!
