  • eggs - 3 item
  • sugar
  • pecans, chopped fine - 1 c
  • cinnamon - 1 tsp
  • nutmeg - 1 tsp
  • cooked prunes - 2 c
  • vanilla - 1 Tbsp
  • oil or margarine - 2/3 c
  • plain flour - 2 c
  • salt - 1 tsp
  • allspice - 1 tsp
  • soda - 1 tsp
  • buttermilk - 1 c
  • Combine flour and spices
  • brown sugar - 2 c
  • evaporated milk - 1/2 c
  • powdered sugar - 4 c

How to make prune cake:

Mix eggs, oil and sugar. Combine flour and spices. Mix together alternating with buttermilk and soda. Add chopped prunes and vanilla. Bake at 350° for 30 to 45 minutes in layer pans. Cool. Frost with Caramel Icing.Caramel Icing:1 c. white sugar2 c. brown sugar1/2 c. evaporated milk4 c. powdered sugar1 tsp. vanilla Melt butter in saucepan. Add sugar and cook over low heat two minutes, stirring constantly. Add milk and continue to cook until mixture comes to a rapid boil. Remove from heat. Gradually add powdered sugar and vanilla. Cool and spread between layers and on top of cake.
