Ingredients/Components

  • salt - 5 Tbsp
  • stalk celery, chopped fine - 1 item
  • medium onions, chopped fine - 2 item
  • white vinegar - 1/2 c
  • jar mustard - 1/2 oz
  • granulated white sugar - 1 c
  • jar Miracle Whip salad dressing - 3/4 item
  • white potatoes - 6 lb
  • large green peppers, chopped fine - 2 item
  • eggs, boiled hard and chopped fine - 1/2 doz
  • jar sweet relish, drained - 1 oz

How to make potato salad:

Peel the potatoes and cut into small quarters; wrench the potatoes and cover with sufficient amount of water; bring to a boil and boil until tender, not mushy. Drain and rinse with cool water for about 5 minutes.

Combine chopped onions, celery, green peppers, chopped eggs and relish; mix well. Add the cooked potatoes and mix. Add salt, sugar, vinegar, mustard and salad dressing. Mix all of the ingredients until blended well. Less salad dressing may be desired and a little more might be desired. Makes 6 to 8 pounds.

For a decoration, sprinkle a small amount over the potato salad which has been placed in a serving bowl or left in the bowl in which it was mixed.

A delicious salad that may be served with ham, chicken, fish, beef, barbecued ribs, rib tips and hot links. Makes 6 to 8 pounds.
