Potato salad
Ingredients/Components
- potatoes about 6 medium - 2 lb
- finely chopped onion - 1/2 c
- bottled Italian dressing - 1/4 c
- salt - 1 tsp
- pepper - 1/8 tsp
- mayonnaise - 1/2 c
- chopped celery - 1/2 c
- hard-cooked eggs, cut up - 2 item
How to make potato salad:
Heat water to boiling. Add potatoes and heat to boiling. Reduce heat; cover and cook until tender. Drain and cool. Cut potatoes into cubes; stir in onion, salad dressing, salt and pepper. Cover and refrigerate at least 2 hours.Just before serving, toss with mayonnaise until potatoes are well coated. Stir in celery and eggs. Makes 4 to 6 servings.
