Ingredients/Components
- paprika - 1 Tbsp
- celery seed - 2 Tbsp
- flour - 2 Tbsp
- salt - 1 tsp
- sugar - 1/2 c
- mustard - 1 Tbsp
- eggs - 2 item
- water - 1/2 c
- cooked cubed potatoes - 3 5
- to 10 hard-boiled eggs - 8 item
- to 30 slices sweet pickles, diced - 20 item
- to 3 pieces of celery, diced - 2 item
- mayonnaise - 2 3
- oleo - 2 Tbsp
- vinegar - 1/2 c
How to make potato salad:
Combine cooked potatoes, pickles, celery, paprika and celery seed. Take the hard-boiled eggs and dice all but two. Add to potatoes and mix.In saucepan, mix flour, salt and sugar. Add mustard and oleo. Heat until oleo is melted. Beat in eggs (raw) until smooth. Stir in vinegar and water. Bring to boil, stirring constantly. Remove from heat. Stir in mayonnaise to taste. Pour over potatoes and mix well. Slice the two hard-boiled eggs; lay on top. Sprinkle with paprika and parsley. Chill well.
