Hot potato salad
Ingredients/Components
- sugar - 3 Tbsp
- salt - 2 tsp
- flour - 2 Tbsp
- water - 1/4 c
- vinegar - 1/2 c
- chopped onion - 3/4 c
- mustard - 1 tsp
- mayonnaise - 2 Tbsp
- celery seed - 1/4 tsp
- sliced celery - 3/4 c
- hard boiled eggs - 4 item
- bacon drippings - 3 Tbsp
- slices of crisp bacon - 8 item
- potatoes, well cooked - 8 item
- chopped parsley opt - 1 Tbsp
How to make hot potato salad:
Cook potatoes and eggs. Slice and place in layers in casserole dish. Cook bacon. Mix salt, bacon drippings, mustard, sugar, flour, vinegar, water and celery seed. Boil until clear. Add celery and onion and let stand a few minutes. Lastly add the mayonnaise and parsley; mix. Pour over potatoes. Top with bacon pieces.(Note) Make a layer of potatoes, a layer of egg and a layer of dressing. You end up with 3 layers of potatoes and 2 of egg, with bacon on top.
