Potato pancakes
Ingredients/Components
- salt - 2 tsp
- flour - 1 Tbsp
- vegetable oil - 3 Tbsp
- egg - 1 item
- medium potatoes - 4 item
- shredded Cheddar cheese optional - 2 Tbsp
- Fruit-Fresh - 1 item
- fresh pepper to taste - 1 item
How to make potato pancakes:
Peel and grate potatoes coarsely; sprinkle Fruit-Fresh over grated potatoes to maintain color. Mix salt, pepper and egg with potatoes. Add flour; mix again. Heat oil. Form pancakes by squeezing excess juice from potatoes, then pat mixture dry (about 1 tablespoon flat in palm of hand). Add pancakes to hot oil; brown 3 to 4 minutes per side. Drain on paper towel.For variations, you may add grated cheese, chives or onions.
Potato pancakes are good with soup, applesauce or for breakfast.
