Polynesian chicken
Ingredients/Components
- butter or margarine - 1/4 c
- salt - 2 tsp
- flour - 1/2 c
- pepper - 1/4 tsp
- can tomato soup - 1 item
- small onion, sliced thin - 1 item
- boneless chicken breasts - 1 lb
- stuffed olives, sliced - 1/3 c
- pineapple juice - 1/4 c
- frozen shrimp - 7 oz
- small green pepper, sliced - 1 item
- large can pineapple chunks, drain, reserve juice - 1 item
How to make polynesian chicken:
Heat oven to 375°. Melt butter in 13 x 9 x 2-inch baking pan. Roll chicken in mixture of the flour, salt and pepper; then place in pan and bake for 30 minutes. Turn chicken pieces; top with peppers, onions, olives and pineapple chunks. Rinse shrimp in cold water; add to chicken. Combine tomato soup and pineapple juice (or water) and pour over chicken. Cover pan with foil and bake 30 minutes more. Serve over rice. Serves 6.Recipe categories: Chicken, Main dish, One Dish meal.
