Ingredients/Components

  • butter or margarine - 1/4 c
  • salt - 2 tsp
  • flour - 1/2 c
  • pepper - 1/4 tsp
  • can tomato soup - 1 item
  • small onion, sliced thin - 1 item
  • boneless chicken breasts - 1 lb
  • stuffed olives, sliced - 1/3 c
  • pineapple juice - 1/4 c
  • frozen shrimp - 7 oz
  • small green pepper, sliced - 1 item
  • large can pineapple chunks, drain, reserve juice - 1 item

How to make polynesian chicken:

Heat oven to 375°. Melt butter in 13 x 9 x 2-inch baking pan. Roll chicken in mixture of the flour, salt and pepper; then place in pan and bake for 30 minutes. Turn chicken pieces; top with peppers, onions, olives and pineapple chunks. Rinse shrimp in cold water; add to chicken. Combine tomato soup and pineapple juice (or water) and pour over chicken. Cover pan with foil and bake 30 minutes more. Serve over rice. Serves 6.
