Plum cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- confectioners sugar - 1 item
- vegetable oil - 1 c
- self-rising flour - 2 c
- allspice - 1 tsp
- orange juice - 1 item
- 6 oz - 3/4 c
How to make plum cake:
Mix dry ingredients (sugar, flour, spices and salt) in a large mixing bowl. In a separate bowl, mix eggs and oil with wire whisk until well blended. Add to dry ingredients and beat with electric mixer. Add plums and vanilla. Continue beating until well mixed. Pour into greased and floured Bundt pan. Bake at 325° for 1 hour or longer (test for doneness). Cool on wire rack.While still warm, glaze with mixture of orange juice and confectioners sugar. Add chopped nuts to glaze, if desired. Best if made a day or two ahead.
