Ingredients/Components

  • 2 can crushed pineapple
  • sugar - 3/4 c
  • small jar cherries, cut in quarters - 1 item
  • cornstarch or tapioca - 4 Tbsp
  • Let cool
  • baking powder
  • salt - 1 tsp
  • egg yolks, beaten - 3 item
  • butter or margarine - 1/2 c
  • 7 oz - 3/4 c
  • vanilla - 1 tsp
  • Roll crust
  • c chopped nuts optional - 3/4 item

How to make pineapple squares:

Bring to a boil and cook until thick (about 5 minutes). Let cool.Crust:3 1/2 c. flour3 1/2 tsp. baking powder1 c. sugar1 tsp. salt3 egg yolks, beaten1/2 c. butter or margarine3/4 c. (7 oz.) ginger ale1 tsp. vanilla Mix all ingredients together as for regular pie crust. Roll crust. Place on bottom of cookie sheet. Pour in filling. Place another piece of crust on top and seal edges.Topping:3 egg whites sugar3/4 c chopped nuts (optional) Beat egg whites with a fork and spread on top. Sprinkle lightly with sugar and chopped nuts, if desired. Bake at 350° for 30 minutes. When cool, cut in squares.
