  • envelopes unflavored gelatin - 2 item
  • packets Equal - 6 item
  • can crushed pineapple juice packed - 1 oz
  • medium pears, peeled, cored and chopped - 2 item

How to make pineapple-pear mold:

In a small saucepan, soften gelatin in 1/2 cup of the orange juice. Stir in undrained, crushed pineapple and remaining orange juice. Chill until partially set. Fold in pears and Equal and turn mixture into a 6-cup mold. Chill until firm. Unmold onto a plate. Makes 8 servings. Calories per serving: 111. Diabetic exchanges per serving: milk 0, vegetable 0, fruit 2, bread 0, meat 0 and fat 0.
