  • pkg - 2 oz
  • cornstarch - 2 tsp
  • margarine or butter - 1 Tbsp
  • ground ginger - 1/2 tsp
  • diced pimiento - 1 Tbsp
  • hoisin sauce - 2 tsp
  • can pineapple chunks - 1 1/2
  • Country Pride boneless skinless chicken breasts or chicken tenders - 1 lb

How to make pineapple chicken:

Cook frozen broccoli according to package directions; drain. Cover and keep warm. Meanwhile, rinse chicken; pat dry. Cut chicken into thin strips. For sauce, combine undrained pineapple, cornstarch, hoisin sauce and ginger; set aside.

In large skillet, melt margarine. Stir-fry chicken, half at a time, in hot margarine over medium-high heat for 2 to 3 minutes or until chicken is tender and no longer pink. Return all chicken to skillet and push from center of skillet. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Add the pimiento and toss mixture lightly to coat with sauce.

To serve, arrange broccoli on a serving platter. Spoon chicken mixture on top. Serves 4.
