Pineapple bread pudding
Ingredients/Components
- butter, softened - 1/4 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 1 tsp
- milk - 3 c
- flaked coconut - 2/3 c
- raisins - 1/2 c
- instant vanilla pudding - 1 serving)
- can crushed pineapple in own juice - 1 oz
- slices day-old white bread, cut in 1/2-inch cubes - 8 item
How to make pineapple bread pudding:
In large bowl, cream butter, vanilla pudding mix and cinnamon until fluffy. Add eggs, 1 at a time, beating well after each.In another bowl, combine milk, undrained pineapple, coconut, raisins and vanilla. By hand, blend milk mixture into creamed mixture. Fold in bread cubes.
Pour into ungreased, 2-quart casserole. Place in large baking pan. Add water to a depth of 1 inch. Bake at 325° for 1 1/4 hours until knife inserted comes out clean. Serves 8.
