Peanut brittle
Ingredients/Components
- sugar - 2 c
- butter - 1 tsp
- water - 1 c
- soda - 1/4 tsp
- light corn syrup - 1 c
- peanuts - 2 c
How to make peanut brittle:
Combine sugar, corn syrup and water in a large heavy saucepan. Cook slowly, stirring until sugar is dissolved. Cook to soft ball stage (238°). Add peanuts and salt. Cook to hard crack stage (300°), stirring constantly. Remove from heat. Add butter and soda; stir slightly. Pour evenly into a well-greased shallow baking pan or cookie sheet. Spread thin. Cool partially by lifting edges with knife; when firm, turn the entire slab of brittle. When cold, break into pieces. Store at once in an airtight container.
