Chicken and sausage gumbo
Ingredients/Components
- water - 2 qt
- chicken in pieces, skinned - 1 item
- oil - 2/3 c
- hot sausage
- flour - 1/2 c
- ham, chopped - 1/2 lb
- green pepper, chopped - 1/2 c
- celery, chopped - 1 c
- large onions, chopped - 2 item
- parsley - 2 Tbsp
- black pepper - 1 tsp
- cayenne - 1/8 tsp
- thyme
- bay leaves - 3 item
- cloves - 1/8 tsp
- allspice - 1/8 tsp
- basil - 1/2 tsp
- green onions, chopped - 1/2 c
How to make chicken and sausage gumbo:
Cook chicken in water until done. Set resulting chicken broth aside; bone chicken when cool. In the 2-quart pot, brown sausage (sliced) in oil. Set sausage aside. Add flour to oil, stirring, over low heat until dark golden brown. Stir in ham, green pepper, celery and onions. Cook over low heat, stirring, until vegetables soften. Add the reserved broth, stirring until smooth; add the seasoning. Add the chicken and sausage. Simmer, stirring occasionally. Before serving, stir in green onions.
