Ingredients/Components

  • salt and pepper to taste - 1 item
  • mayonnaise - 1/4 1/2
  • can peas, drained - 1 oz
  • small onion, diced fine - 1 item
  • small green pepper, diced fine - 1 item
  • each hard-boiled eggs, diced - 2 item
  • to 7 radishes, sliced - 5 item
  • to 10 sweet pickles, diced - 5 item
  • extra-sharp or sharp Cheddar cheese, cubed small - 4 oz

How to make pea salad:

Mix all drained and cut-up ingredients together with mayonnaise. Best if refrigerated 1 hour before serving to allow flavors to blend.

Variations: My mother used to vary this recipe by substituting either drained pinto beans or drained black-eyed peas for the green peas. These variations are very good also.
