Ingredients/Components
- salt - 1/3 tsp
- baking powder - 3 tsp
- shortening - 1/3 c
- powdered sugar - 2 c
- orange juice - 6 Tbsp
- orange rind
- Pet milk - 6 Tbsp
- unbeaten eggs - 2 item
- sugar 1 c
- flour measure 2 c
- Sift together flour, baking powder, salt, sugar, eggs, shortening, milk and orange juice
How to make orange cupcakes:
Grease or line tin muffin pans (8 - 16-inch) or (24 - 2-inch). Sift together flour, baking powder, salt, sugar, eggs, shortening, milk and orange juice. Beat vigorously for 2 minutes with a spoon or mixer. Fill tin 2/3 full. Bake 15 minutes or until cakes shrink from sides of tins. When cool, spread tops with Orange Frosting.Orange Frosting:3 Tbsp. Pet milk1 1/4 tsp. orange rind1/8 tsp. salt2 c. powdered sugar Put ingredients in a bowl. Beat until smooth and creamy after each addition of sugar (add 1/4 cup at a time).My mother and grandmother made these cupcakes when all us kids were growing up at home. I still make them today.
