Coconut chews
Ingredients/Components
- shortening - 1 c
- butter - 1/4 c
- powdered sugar - 3/4 c
- flour
- eggs - 2 item
- brown sugar - 1 c
- baking powder - 1/2 tsp
- salt - 1/2 tsp
- vanilla - 1/2 tsp
- chopped nuts - 1/2 c
- flaked coconut - 1/2 item
- melted butter - 2 Tbsp
- orange juice - 3 Tbsp
- lemon juice - 1 Tbsp
How to make coconut chews:
Cream together shortening, butter and the 3/4 cup powdered sugar. Blend in the 1 1/2 cups flour. Press mixture in bottom of ungreased 9 x 13-inch pan. Bake 12 to 15 minutes at 350°. While this is baking, mix together the eggs, brown sugar, 2 tablespoons flour, baking powder, salt, vanilla, nuts and coconut. Spread this mixture over the hot baked layer. Bake an additional 20 minutes. Make icing from the 1 1/2 cups powdered sugar, 2 tablespoons melted butter, orange juice and lemon rind and spread over mixture while still warm.
