Ingredients/Components
- butter - 6 8
- dried apricots - 3/4 c
- onions, chopped - 2 lb
- pine nuts, toasted - 1/4 c
- mint, chopped - 2 Tbsp
- cooked white rice, cooled - 2 c
How to make onion stuffing:
In a large skillet, cook onions in butter until soft and slightly golden in color, dividing into two batches, if necessary.Remove to bowl and let cool. Pour hot water over apricots and let them soften for about 15 minutes. Drain, reserve water and coarsely chop apricots. Mix all ingredients together and add reserved water until stuffing has desired consistency. Makes about 4 cups.
