  • eggs - 2 item
  • vanilla - 1 tsp
  • granulated sugar - 1 c
  • butter or margarine - 1 c
  • salt - 1 tsp
  • brown sugar - 1 c
  • baking soda - 1 tsp
  • all-purpose flour
  • chopped pecans or walnuts - 1 c
  • uncooked oatmeal - 3 c

How to make oatmeal crispies:

Cream butter well; add both sugars gradually and beat for 1 minute. Add eggs and vanilla and beat for 2 minutes. In a separate bowl, mix flour, salt, baking soda, oatmeal and nutmeats. Add dry ingredients to the creamed mixture and mix until well blended.

On sheets of waxed paper, form rolls 1 1/2 inches in diameter and roll waxed paper to enclose. Refrigerate several hours until firm. When cold, cut cookies 1/4-inch thick and place on an ungreased baking sheet. Bake at 350° for about 12 minutes or until golden brown. Remove from baking sheet while still warm. Excellent!
