Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- brown sugar - 1 c
- butter - 1/2 c
- soda - 1 tsp
- melted butter - 1/2 c
- boiling water
- nuts - 1/2 c
- oatmeal - 1 c
- white sugar - 1 c
- Cream butter and white and brown sugars
- canned cream, undiluted - 1/4 c
How to make oatmeal cake:
Soak quick-cooking oatmeal in boiling water. Cream butter and white and brown sugars. Add eggs. Sift together flour, cinnamon, soda and salt. Combine dry ingredients with creamed mixture. Add oatmeal; mix well.Bake in greased 9 x 12 x 2-inch pan for 30 minutes in 375° oven. Remove from oven and spread topping. Return to oven 5 minutes.Topping:1 c. coconut1/2 c. melted butter2/3 c. brown sugar1 tsp. vanilla1/4 c. canned cream, undiluted1/2 c. nuts Spread on cake.
