Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • chopped pecans - 1/2 c
  • salt - 1/2 tsp
  • flour
  • brown sugar - 1 c
  • butter - 1/2 c
  • soda - 1 tsp
  • boiling water
  • oatmeal - 1 c
  • white sugar - 1 c
  • canned milk - 1/2 c
  • box flaked coconut - 1 item
  • Combine remaining ingredients; mix well

How to make oatmeal cake:

Pour hot water over oatmeal and set aside to cool. Combine remaining ingredients; mix well. Add cooled oatmeal. Pour into greased and floured large loaf pan. Bake at 325° for 50 to 60 minutes or until cake pulls away from sides of pan.Icing:9 Tbsp. butter1 box flaked coconut1/2 c. canned milk1 c. brown sugar1 tsp. vanilla1/2 c. chopped pecans Mix and pour over hot cake. Place under broiler for about 3 minutes.
