Ingredients/Components
- sugar - 1 c
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- brown sugar - 1 c
- evaporated milk - 1/4 c
- nutmeg - 1/4 tsp
- coconut - 1 c
- soda - 1 tsp
- boiling water
- oleo - 6 Tbsp
- oatmeal
- stick oleo - 1 item
- Cover and let stand 20 minutes
How to make oatmeal cake:
Put oatmeal, boiling water and oleo in bowl. Cover and let stand 20 minutes. Do not stir. Add salt, soda, cinnamon, nutmeg, vanilla, sugar, brown sugar, eggs and flour. Mix slowly. Pour in greased and floured oblong pan. Bake at 350° for 25 to 30 minutes. Add icing. Return to oven until topping bubbles and is brown.Icing:1 c. chopped pecans1/2 c. brown sugar6 Tbsp. oleo1 c. coconut1/4 c. evaporated milk Cook oleo, milk and sugar until it boils good.
