Oatmeal cake
Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- flour
- brown sugar - 1 c
- coconut - 1 c
- soda - 1 tsp
- confectioners sugar - 1 item
- sticks margarine - 2 item
- boiling water
- raisins - 1/2 c
- oatmeal - 1 c
- white sugar - 1 c
- small can crushed pineapple - 1 item
- pecans, chopped - 1/2 c
How to make oatmeal cake:
Mix together boiling water, oatmeal and raisins. Let stand about 15 to 20 minutes. In large bowl cream together 1 cup white sugar, 1 cup brown sugar and 1 stick margarine. Then add eggs; blend well. Add the raisin-oatmeal mixture, flour, cinnamon, salt, soda, vanilla and nuts. Mix well. Bake in greased 9 x 13-inch pan for 35 to 45 minutes at 350°. Cool.Cook until thick 1 stick margarine, 1 1/2 cups brown sugar and pineapple. Cool a little and add enough confectioners sugar to make a good spreading consistency. Add 1 cup coconut and 1/4 cup pecans, blending well. Spread over cake.
