  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 3 tsp
  • salt - 1 tsp
  • chopped nuts - 1 c
  • flour - 2 c
  • oil - 1 c
  • soda - 1 tsp
  • raw, unpeeled, grated zucchini coarsely packed - 3 c

How to make my best zucchini bread:

Beat eggs until light and fluffy. Add sugar, oil and vanilla. Blend together. Stir in squash. Sift dry ingredients and blend into creamed mixture. Fold in nuts. Bake in two 9 x 5-inch loaf pans which have been greased and floured. Bake at 350° f
