Mushroom appetizers
Ingredients/Components
- butter or margarine - 2 Tbsp
- dash of salt - 1 item
- parsley flakes - 3 tsp
- dry bread crumbs - 3 Tbsp
- grated Parmesan cheese, divided - 4 Tbsp
- finely chopped, cooked shrimp - 1/2 c
- finely minced onions
- sherry, divided - 3 Tbsp
- very large or 24 small mushrooms, remove stems - 12 item
- small whole cooked shrimp - 1 item
How to make mushroom appetizers:
In a small skillet, saute onion in butter until tender. Remove from heat and stir in shrimp, 3 tablespoons each Parmesan and crumbs, 2 tablespoons sherry, the parsley and salt. Stuff mushroom caps with shrimp mixture.Place on baking sheet or broiler pan. Sprinkle with remaining 1 tablespoon each Parmesan and sherry. Broil 5 to 6-inches from heat source for 5 minutes or until lightly browned. Serve hot garnished with shrimp and parsley. Serves 6.
