  • cinnamon - 1/2 tsp
  • water - 2 c
  • cream of tartar - 2 tsp
  • lemon juice - 2 Tbsp
  • grated rind of 1 lemon
  • Blue Bonnet margarine - 2 Tbsp
  • crumbs - 36 Ritz
  • pastry for 2-crust pie

How to make mock apple pie:

No apples needed. Roll out half of the pastry and line a 9-inch pie plate. Place crackers in prepared crust. In saucepan, over high heat, heat water, sugar and cream of tartar to a boil; simmer for 15 minutes. Add lemon juice and rind; cool.
