  • eggs - 3 item
  • semi-sweet chocolate - 1 oz
  • vanilla extract - 1 tsp
  • unsweetened chocolate - 2 oz
  • light corn syrup - 3 Tbsp
  • unsalted butter
  • unbaked 10-inch pie shell - 1 item
  • instant coffee dissolved in 2 Tbsp - 1 Tbsp

How to make mississippi mud pie:

Filling:1/2 c. unsalted butter2 oz. unsweetened chocolate1 oz. semi-sweet chocolate3 eggs3 Tbsp. light corn syrup1 tsp. vanilla extract1 Tbsp. instant coffee dissolved in 2 Tbsp. sour cream Keep pastry lined pie dish chilled until time to bake.

Measure the butter and chocolate into the top of a double boiler and melt over hot (not boiling) water. Remove from heat and cool. With an electric mixer or processor, beat together all remaining ingredients until well blended. Stir in the melted chocolate-butter mixture. Pour into prepared pie shell. Bake in lower third of a 350° oven for 35 to 45 minutes or until filling puffs up and forms a crisp, deeply crackled crust and pastry edges look golden brown. Cool on wire rack. Filling will sink down as it cools and inner layer will set, but remain softly chewy. Serve at room temperature, topped with vanilla ice cream, yogurt or whipped cream.
