  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1/4 tsp
  • chopped nuts - 1 c
  • evaporated milk - 1/2 c
  • cocoa - 1/3 c
  • shortening - 1 c
  • all-purpose flour
  • box confectioners sugar
  • jar marshmallow cream - 1 item
  • 2 sticks margarine, melted - 1 c

How to make mississippi mud cake:

Icing:1 (16 oz.) box confectioners sugar1/3 c. cocoa1 c. (2 sticks) margarine, melted1/2 c. evaporated milk1 tsp. vanilla2 c. chopped nuts For cake: Cream together sugar and shortening. Add eggs, one at a time. Sift flour, salt and cocoa together, then add to shortening and sugar mixture; beat well. Add vanilla and nuts. Mix well. Pour into a greased and floured 9 x 13-inch baking pan. Bake in a 300° oven for 30 to 35 minutes. After baking, spread marshmallow cream over the top of cake and return to the oven for about 10 minutes. Watch carefully, it might burn. Let the cake cool.

For icing: Sift confectioners sugar and cocoa. Add the melted margarine, evaporated milk and vanilla; mix well. Add the chopped nuts. Mix well and spread on cooled cake. Cool thoroughly and cut into small pieces to serve.
