Ingredients/Components
- eggs - 4 item
- salt and pepper to taste - 1 item
- corn tortillas - 6 item
- shredded cheese - 1/2 c
- oil or margarine - 3 Tbsp
How to make migas:
In a nonstick pan, melt margarine and add corn tortillas, torn or cut into small pieces. Saute and then add eggs and salt and scramble until cooked. Top with shredded cheese and serve. Great for breakfast, lunch or dinner.For a spicy variation, saute chopped onion and hot peppers or tomato along with tortillas.
