  • flour - 1 c
  • buttermilk - 1 c
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • vegetable oil - 1/4 c
  • egg - 1 item
  • dash of salt - 1 item
  • cottage cheese
  • grated Cheddar cheese - 1 2
  • corn meal - 2 c
  • 2 can cream-style corn
  • sliced hot banana peppers as needed - 1 item

How to make mexican cornbread:

Combine all ingredients, except grated cheese and peppers. Pour 1/2 of mixture in large oiled pan. Cover generously with sliced hot banana peppers. Sprinkle with grated Cheddar cheese. Add remaining batter. Bake 45 minutes at 350°. Let set 10 to 15 minutes before cutting. Delicious hot or cold. Can be baked in large iron skillet or long oblong cake pan.
