Mexican cornbread
Ingredients/Components
- flour - 1 c
- buttermilk - 1 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- vegetable oil - 1/4 c
- egg - 1 item
- dash of salt - 1 item
- cottage cheese
- grated Cheddar cheese - 1 2
- corn meal - 2 c
- 2 can cream-style corn
- sliced hot banana peppers as needed - 1 item
How to make mexican cornbread:
Combine all ingredients, except grated cheese and peppers. Pour 1/2 of mixture in large oiled pan. Cover generously with sliced hot banana peppers. Sprinkle with grated Cheddar cheese. Add remaining batter. Bake 45 minutes at 350°. Let set 10 to 15 minutes before cutting. Delicious hot or cold.
