Mexican chicken



  • Velveeta cheese - 1/2 lb
  • chicken broth - 1 c
  • can cream of mushroom soup - 1 item
  • onion, chopped - 1/2 item
  • Cheddar cheese - 1 item
  • can Ro-Tel tomatoes with green chiles - 1 item
  • Doritos, crushed - 1 pkg
  • to 6 pieces chicken, boiled and boned - 4 item

How to make mexican chicken:

Combine in saucepan the cream of mushroom soup, 1 can Ro-Tel, 1 cup chicken broth and onion. Layer in casserole dish 1/2 bag Doritos (crushed), slices of Velveeta cheese, chicken, 2/3 sauce, remaining Doritos and remaining sauce. Sprinkle 1 cup grated Cheddar cheese on top. Bake at 350° approximately 30 minutes or until cheese melts.

To double recipe for company, use 1 more can soup, 1 1/2 cups broth and large bag Doritos.
