Ingredients/Components
- sugar
- milk
- vanilla extract - 1/2 tsp
- salt - 1/2 tsp
- water - 1/2 c
- egg yolks - 8 item
- almond extract - 1/2 tsp
- baking powder
- shortening - 3/4 c
- egg whites - 4 item
- sifted cake flour
- light corn syrup - 1 Tbsp
- chopped pecans or walnuts - 1 c
- Add egg yolks, one at a time
- macaroon crumbs - 1/2 c
How to make lord baltimore cake:
Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer. Add egg yolks, one at a time. Beat well after each addition. Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix just until blended after each addition. Stir in flavorings. Pour batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans; cool completely. Frost.Frosting:1 c. chopped mixed candied fruit1 c. chopped pecans or walnuts1/2 c. macaroon crumbs1 tsp. vanilla extract1/2 tsp. almond extract1 1/2 c. sugar1/2 c. water1 Tbsp. light corn syrup4 egg whites Combine sugar, water and syrup. Cook over low heat until mixture reaches soft ball stage (240°). Beat egg whites (at room temperature) until soft peaks form. Continue to beat slowly, adding hot syrup mixture. Beat 1 minute. Yield: 7 cups.Combine 2 cups frosting, candied fruits and remaining ingredients. Spread between layers. Spread remaining frosting on top and sides of cake. Yield: 7 cups.
