Ingredients/Components

  • cornstarch - 1/2 c
  • all purpose flour
  • confectioners sugar - 1/3 c
  • lemon juice - 1 tsp
  • grated lemon peel - 1 tsp
  • butter no substitutes, softened - 3/4 c
  • Beat in lemon juice
  • 1-3 drops yellow food coloring, optional

How to make lemon meltaways:

In a mixing bowl, cream butter and confectioners sugar until light and fluffy. Beat in lemon juice. Combine the flour and cornstarch; gradually add to the creamed mixture. Shape into two 8-inch rolls; wrap each roll in plastic wrap. Refrigerate for 2 hours or until firm. Unwrap & cut into 1/4 inch slices. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 8-12 minutes or until the cookies are firm to the touch. Remove to wire racks to cool.Frosting:1/4 c. butter, softened3/4 c. confectioners sugar1 tsp. lemon juice1 tsp. grated lemon peel 1-3 drops yellow food coloring, optional In a small mixing bowl, combine the butter, confectioners sugar, lemon juice, lemon peel, and food coloring (if desired). Frost cooled cookies. Yield: about 5 doz.
