  • flour
  • cornstarch - 1/2 c
  • confectioners sugar - 1/3 c
  • lemon juice - 1 Tbsp
  • grated lemon peel - 1 tsp
  • salt-free butter - 3/4 c

How to make lemon meltaways:

Frosting:3/4 c. confectioners sugar1/4 c. salt-free butter1 tsp. grated lemon peel1 tsp. lemon juice Preheat oven to 350°. In mixer, combine all cookie ingredients. Beat at low speed, scraping sides of bowl often until well mixed, 2 to 3 minutes. Shape dough into two 8 x 1-inch logs. Wrap each log in waxed paper. Chill until firm. Cut each log into 1/4-inch slices. Place 2 inches apart on ungreased cookie sheets. Bake near center of oven for 8 to 12 minutes (cookies will not be brown). Cool completely. Spread with frosting.

Exchange: 4 cookies equal 1 bread.
