Ingredients/Components

  • sugar - 3/4 c
  • cream cheese - 4 oz
  • cornstarch - 1/4 c
  • water - 1 c
  • egg whites - 2 item
  • lemon juice - 1/2 c
  • grated lemon rind - 1 tsp
  • slightly beaten egg yolks - 2 item
  • 8-inch baked pie shell

How to make lemon cloud pie:

In saucepan, combine 3/4 cup sugar, cornstarch, water, lemon rind, lemon juice and egg yolks. Cook over medium heat; stir constantly until thick. Remove from heat. Add 4 ounces cream cheese; blend well. Beat egg whites. Add 1/2 cup sugar (beat stiff). Fold into lemon mixture. Spoon into pie shell; chill for 2 hours.
