Leek and potato soup
Ingredients/Components
- salt - 1/2 tsp
- butter - 4 oz
- pepper to taste - 1 item
- small onion - 1 item
- chicken stock - 1 pt
- medium potatoes, cubed - 3 item
- hot cream - 1/2 c
- medium leeks - 3 item
- large stalk celery - 1 item
How to make leek and potato soup:
Chop leeks, onion and celery. In pan, melt butter and add leeks, onion and celery. Stir well until well covered with butter. Add chicken stock, potatoes, salt and pepper. Cook for 25 minutes. Puree in food processor or blender. It will be thick. Add to soup the hot cream and stir well. Serve at once. May add chives or parsley to top of soup.
