Lazy daisy cake
Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 2 tsp
- milk - 1/2 c
- salt - 1/2 tsp
- flour - 2 c
- butter - 2 Tbsp
- coconut - 1 c
- baking powder - 2 tsp
- cream - 8 Tbsp
- plus 2 Tbsp - 1 c
- cinnamon optional - 4 tsp
- Separate yolks from whites
How to make lazy daisy cake:
Grease and flour a 13 x 9-inch cake pan. Separate yolks from whites. Beat egg yolks until thick and lemon colored. Beat egg whites until stiff, but not dry. Add egg whites to yolks. Beat in sugar. Add vanilla. Sift together flour, baking powder, salt and cinnamon. Add dry ingredients to egg mixture, a small amount at a time. Scald milk. Add butter to milk and let melt. Add milk and butter to first mixture and blend well. Bake in moderate oven, 325° to 350°, for 40 minutes.Topping:10 Tbsp. melted butter1 c. plus 2 Tbsp. brown sugar8 Tbsp. cream1 c. coconut Mix well and pour over warm cake.
