Jamaican easter bun
Ingredients/Components
- cinnamon - 1/4 tsp
- eggs - 2 item
- milk - 1 c
- salt - 1/2 tsp
- brown sugar - 2 c
- nutmeg - 1/2 tsp
- oil - 1 Tbsp
- baking powder - 3 tsp
- all-purpose flour - 3 c
- ginger - 1/2 tsp
- raisins - 1/4 c
- allspice - 1/2 tsp
- mixed candied fruits - 1/4 c
How to make jamaican easter bun:
Sift together dry ingredients, except sugar. Beat eggs; mix with milk, sugar and oil. Mix into dry ingredients, add fruits. Bake in greased loaf tin at 350° for 30 minutes, then reduce temperature to 300° and continue baking for 1/2 hour or more, until a knife inserted comes out clean. Wrap with plastic wrap while still warm to retain moisture. This will keep several weeks in refrigerator. It is better if it sets a day or two before serving.
