India relish
Ingredients/Components
- cinnamon - 1 tsp
- salt - 1/4 c
- brown sugar - 3 c
- vinegar - 4 c
- ground cloves - 1/2 tsp
- chopped celery - 3 c
- chopped onions - 2 c
- ground allspice - 1/2 tsp
- mustard seed - 1/3 c
- chopped red peppers - 2 item
- peeled and chopped tomatoes - 12 c
How to make india relish:
Combine tomatoes, celery, onions and salt; let stand 2 hours. Add vinegar, brown sugar, mustard seed, red peppers, cinnamon, allspice and cloves to tomato mixture. Cook until mixture is thickened. Carefully fill hot jars, one at a time, leaving 1/4-inch head space. Wipe jar rim clean, place lid on, and screw band down evenly and firmly. Place jars in canner; process pint and 1/2-pint jars 15 minutes in boiling water.Recipe categories: Low protein, Condiments, etc., Vegetables.
