medium onion, diced - 1 item
salt and pepper to taste - 1 item
dressing - 1 item
cooked, diced potato - 3 4
hard-cooked eggs optional - 3 item
medium to large eggs - 2 item

How to make hot potato salad:

Dressing:3/4 c. sugar3/4 c. vinegar3/4 c. water2 medium to large eggs salt and pepper to taste Combine potatoes, celery, parsley, onion and hard-cooked eggs. Combine dressing ingredients and bring to a boil. Cook until thick, stirring constantly. Pour over potato mixture.
