Ingredients/Components

  • milk
  • vanilla extract - 3 Tbsp
  • salt - 1 tsp
  • water - 4 c
  • raisins
  • stick butter or margarine - 1 item
  • large eggs, beaten - 4 item
  • cooking oil or shortening - 1 Tbsp
  • box rice not converted or Minute rice - 1 lb
  • sugar or more if you like it sweeter

How to make homemade rice pudding:

Preheat the oven. Put the 4 cups of water in a medium size pan and bring to a boil. Add the salt and shortening. Add the entire box of rice. Stir. Cook rice for 20 to 30 minutes until tender. Pour hot rice into a large, deep dish casserole dish, with glass lid (3-quart size or slightly larger). Add 1 stick butter or margarine. Stir until melted. Add milk and sugar. Mix well. Add eggs and stir. Add vanilla flavoring, making sure it disappears, then add the raisins. Cover with the glass lid which is excellent for checking on your pudding so that it does not boil over.

Place casserole dish in the oven and bake for 35 to 45 minutes or until the rice pudding becomes a golden brown on the top and begins to separate from the sides of the dish. Let cool for an hour. Serve warm.

This rice pudding can be eaten warm, at room temperature or cold right out of the refrigerator.
