Holiday cranberry salad
Ingredients/Components
- pkg - 1 oz
- sugar - 1 c
- boiling water - 2 c
- can crushed pineapple undrained - 1 1/4
- lemon juice - 2 Tbsp
- fresh cranberries, ground - 2 c
- small oranges unpeeled, seeded and ground - 2 item
- finely chopped celery - 2 c
- chopped walnuts - 1 c
- lettuce leaves - 1 item
- sugar frosted cranberries - 1 item
- orange twist - 1 item
How to make holiday cranberry salad:
Dissolve gelatin and sugar in boiling water. Drain pineapple, reserving juice; set pineapple aside. Add water to pineapple juice to measure 1 cup. Stir in lemon juice. Stir juice mixture into gelatin mixture; chill until consistency of unbeaten egg whites.Add cranberries, oranges, celery, walnuts and pineapple to gelatin mixture; mix well. Pour into a lightly oiled 10-cup mold; chill until set. Unmold on lettuce leaves. Garnish with frosted cranberries and orange twist. Yields 15 to 18 servings.
