High fiber bran muffins
Ingredients/Components
- sugar - 1/3 c
- salt - 1 tsp
- buttermilk
- baking soda - 1 tsp
- light molasses - 1/2 c
- uncooked oats
- unsifted all-purpose flour I use wheat flour - 2 c
- whole bran cereal or wheat germ - 1 c
- each: raisins, dried prunes and apricots - 1/2 c
- eggs, lightly beaten artificial eggs may be used - 2 item
How to make high fiber bran muffins:
Preheat oven to 350°. In a mixing bowl, combine the flour, sugar, salt and baking soda. Stir in the oats, bran cereal and fruit. Combine eggs, buttermilk and molasses. Add to dry ingredients; stir just until the dry ingredients are moistened. Spoon the batter into greased muffin cups about 2/3 full. Bake for 15 to 20 minutes, or until a toothpick inserted comes out clean. Makes about 20 muffins, with 130 calories each.
