Herbed tomato chicken
Ingredients/Components
- salt - 1 tsp
- cloves garlic, minced - 2 item
- dried basil, crushed - 1 tsp
- can tomatoes, cut up - 1 1/2
- bay leaf - 1 item
- dry white wine - 1/4 c
- chopped green pepper - 1/4 c
- tomato sauce - 1/2 c
- medium onions, sliced - 2 item
- jar sliced mushrooms, drained - 1 1/2
- whole medium chicken breasts, skinned and halved lengthwise - 3 item
How to make herbed tomato chicken:
In skillet, combine onions, garlic and 1/2 cup water. Bring to boiling. Cover and simmer 10 minutes or until onion is tender. Drain. Add chicken to skillet. Combine undrained tomatoes, tomato sauce, mushrooms, green pepper, basil, salt, bay leaf and dash of pepper. Pour over chicken, cover and simmer for 30 minutes. Stir in wine and cook, uncovered, for 15 minutes more. Remove bay leaf. Skim excess fat from juices. Transfer chicken and sauce to serving platter.
